If you are on a budget my advice would always be to spend the money on a single, high quality, big monitor than to buy 2 displays, if you need more workspace then buy a large monitor that got high resolution, this way you get bigger workspace and more quality picture.
A single monitor is also better for games, recently ATI released video cards that support 3 or more monitors to act as a single display, that might be cool and useful for some people but personally I would still prefer a 30 inch high quality resolution display than 3 20 inch displays.
With 3 or more displays, you have the monitors phyiscal borders who seperate the image, so you are looking at the screen with bars slicing the picture, I don't like that.
